Hot Juan's Rub Down (dry

Hot Juan's Rub Down is a dry spice marinade, or rub. These
marinades are a very concentrated mix of herbs and spices,
each is made using a single variety of chile pepper to give
it the desired level of heat and flavour.
Habanero - The world's hottest Chile
De Arbol - A hot but not super hot chile
Chipotle - A sweetly flavoured smoked Jalapeno chile
Pasilla - A warm chile with a dried fruit and herby flavour
Caribe - Mild heat, with a sweet tangy flavour
Unlike sauces and
liquid marinades, a dry marinade not only imparts its flavor
to the meat while marinating, it will then also form a coat
or crust over the meat when cooking. Hot Juan's dry marinades
have been developed not to be sweated off during cooking;
so much more of their flavour is retained.
Juan's Secrets -
NO Sugar
Lots of fast dry
marinades and BBQ products contain sugar and are mistakenly
used directly over hot coals. Exposure to such high temperatures
will rapidly caramelise the sugar which then burns leaving
an unpleasant after taste.
To make them as flexible as possible
Hot Juan's dry marinades contain no sugar, they can therefore
be used directly in a grill or BBQ. If you are going to
use them in an oven or not directly over the coals in a
BBQ, you can mix the marinade with up to the same amount
of white granulated sugar
